Refried Bean Burrito with Gluten-Free Tortilla

I can't get enough of Mexican food - I make it on average every day, despite my best efforts to make something from another region. It's just so easy and healthy - toss together some freshly cooked beans, avocado, tomato, onion, lettuce and cilantro wrapped up in a gluten-free tortilla (Food for Life's Brown Rice Tortillas rock!) and you've got a filling and inexpensive meal. Here's one of my favorite burritos to make, which has a little extra oomph in it due to the refried beans and Daiya:

Ingredients (all organic)

  • Refried beans (make your own from below or find a vegan, organic kind in a BPA-free can)
  • Daiya pepperjack
  • Avocado
  • Tomato
  • Lettuce (romaine works great)
  • Onion
  • Cilantro
  • JalepeƱo sauce (optional; make sure to get organic)
  • Gluten-free tortillas, such as Food for Life's Brown Rice Tortillas

Directions:
  1. Pile all the ingredients into the tortilla (warm if you'd like), wrap up, and enjoy!

Refried Beans, modified from The 30 Minute Vegan

Ingredients:
  • Black beans (freshly cooked is ideal) - 1 cup
  • Coconut Aminos (or wheat-free soy sauce) - 1 tbsp
  • Olive oil - 1 tbsp
  • Garlic clove - 1
  • Onion, diced - 1/8 cup
  • Cilantro - 1/2 tbsp
Directions:
  1. Warm up the beans to soften them
  2. Blend beans, aminos/soy sauce, olive oil, and garlic
  3. Mix in onion and cilantro

  1. Great recipe, and great site, but I can't quite figure out why you specify organic produce (it hasn't been proven to be any more tasty or safe than conventionally-farmed produce), and gluten-free products (only a tiny segment of the population has any form of gluten intolerance). I'm all for healthy, sustainable, vegan food, but to me it seems like science is the best guide for determining these things -- rather than buying into vacuous marketing hype.

    1. Check out my YouTube video on Monsanto for a good explanation on why organic food is important. I will do one on gluten-free food specifically, but I often talk about how sensitive to it I am in my videos, which is why I don't eat it. I share recipes that I use in my own life so people with similar preferences can enjoy them too. Please visit ecovegangal.com for future updates (this is my old website)
